      Abstract
      Ikan rucah di Indonesia jumlahnya sangat besar namun kurang dimanfaatkan. Salah alternatif pemanfaatannya adalah dibuat surimi, namun surimi yang dihasilkan tidak selalu memiliki mutu yang baik. Surimi dengan mutu rendah dapat ditingkatkan nilai tambahnya menjadi bahan baku dalam pembuatan edible fim.
