      Abstract
      Penelitian bertujuan untuk mempelajari: (1) pengaruh jenis inokulum murni kering terhadap perubahan sifat-sifat organoleptik dan komponen kimia tape ubi kayu yang dihasilkan, (2) pola perubahan karbohidrat (pati) selama fermentasi tape ubi kayu.
