Abstract
The aim of this study was to explore the potency of catfish (Pangasius sp) bone waste to be used as an alternative source of calcium for human through processing it into flour and preserving it in the form of dried noodle product. Furthermore, the nutritional quality of calcium was conducted by in vitro assay of calcium bioavailability. Some factors influencing the bioavailability (protein, phosphorous, dietary fibre-like, pH) were also observed
