      Valuasi Bisnis dan Strategi Komersialisasi Inovasi Sakasea: Camilan Sehat Fungsional Berbasis Tempe dan Spirulina

      Abstract
      Permintaan terhadap makanan sehat dan pangan fungsional terus meningkat, namun banyak inovasi pangan berbasis riset mengalami kesenjangan ketika masuk pasar karena kendala kelayakan finansial, keterbatasan skala produksi, konsistensi mutu, dan strategi komersialisasi yang belum terarah. Sakasea merupakan inovasi camilan sehat fungsional berbasis tempe dan spirulina yang dikembangkan dalam ekosistem riset perguruan tinggi, sehingga memerlukan evaluasi kelayakan bisnis sekaligus pemilihan strategi komersialisasi yang tepat untuk memperkuat daya saing dan mempercepat adopsi pasar. Penelitian ini bertujuan: (1) valuasi bisnis Sakasea menggunakan indikator investasi dan profitabilitas; (2) mengidentifikasi faktor internal dan eksternal yang memengaruhi komersialisasi; serta (3) merumuskan dan memprioritaskan strategi komersialisasi yang paling efektif. Penelitian dilakukan di Bogor pada Februari–Desember 2025. Data dikumpulkan melalui wawancara mendalam dengan pemangku kepentingan internal (R&D, produksi/operasional, pemasaran, pengelola produk) dan eksternal (pemasok, pelaku usaha pangan, pakar, serta konsumen potensial), serta dilengkapi data sekunder dari dokumen internal dan literatur. Analisis internal dilakukan menggunakan VRIO, analisis eksternal menggunakan Porter’s Five Forces, kemudian disintesis dalam SWOT. Valuasi bisnis dihitung menggunakan R/C Ratio, ROI, BEP, NPV, IRR, BCR/PI, dan Payback Period serta dianalisis melalui beberapa skenario untuk melihat perubahan kelayakan pada variasi skala produksi dan penjualan. Hasil menunjukkan bisnis saat ini belum layak secara finansial karena skala ekonomi belum tercapai dan biaya belum efisien, sehingga BEP masih jauh dari penjualan aktual. Namun, lewat analisis skenario, kelayakan bisa dicapai jika produksi dan penjualan meningkat pada level realistis–optimistis, yang akan memperbaiki arus kas, menaikkan profitabilitas, dan mempercepat payback period. Secara strategi, kunci utamanya adalah diferensiasi berbasis sains (tempe–spirulina dan kredibilitas institusi), penguatan sistem mutu serta konsistensi produk untuk mendorong repeat purchase, dan peningkatan kapabilitas pemasaran/komersialisasi agar proposisi nilai lebih jelas dan dipercaya. Pengembangan portofolio berbasis R&D juga penting untuk memperluas segmen sehingga pertumbuhan tidak bergantung pada satu varian. Implikasinya, eksekusi perlu bertahap: perjelas positioning, standardisasi SOP dan kontrol mutu, kuatkan komunikasi edukatif berbasis bukti, serta siapkan strategi skala (kapasitas, kemitraan, dan pembiayaan) agar bisnis menjadi layak dan berkelanjutan.
       
      Demand for healthy and functional foods is rising, yet research-based food innovations frequently face commercialization gaps due to weak financial feasibility, insufficient production scale, inconsistent quality, and unclear go-to-market strategy. Sakasea is a tempeh–spirulina functional healthy snack innovation developed within a university research ecosystem, requiring both business feasibility assessment and a focused commercialization strategy to compete and accelerate market adoption. This study aims to (1) business valuation of Sakasea using investment and profitability indicators; (2) identify internal and external factors influencing commercialization; and (3) formulate and prioritize effective commercialization strategies. The research was conducted in Bogor during February–December 2025. Primary data were collected through in-depth interviews with internal stakeholders (R&D, operations/production, marketing, and product management) and external stakeholders (suppliers, food business actors, experts, and potential consumers), complemented by secondary data from internal documents and literature. Internal analysis used VRIO, external analysis applied Porter’s Five Forces, and both were synthesized into SWOT. Business valuation was calculated using R/C Ratio, ROI, BEP, NPV, IRR, BCR/PI, and Payback Period, supported by scenario analysis to evaluate feasibility under different scaling assumptions. Results show that the current business condition is not financially feasible due to the lack of economic scale and cost inefficiency, with a break-even target far above current sales. However, scenario analysis indicates feasibility can be achieved under realistic to optimistic scaling, improving cash flow, profitability, and payback. Strategically, the study highlights the importance of science-based differentiation (tempeh–spirulina and institutional credibility), strengthening quality systems to ensure consistent product performance and repeat purchases, improving marketing and commercialization capability to clarify the value proposition, and developing an R&D-driven product portfolio to broaden market segments. Managerial implications emphasize staged execution focusing on positioning, SOP-based quality standardization, evidence-based educational marketing, and scaling readiness through capacity building, partnerships, and financing.
