Analisis Kelayakan Bisnis Pembuatan Nugget Sayur sebagai Produk Olahan Inovasi di Nabila Farm Lembang
Abstract
Nabila Farm Lembang memiliki sisa sortir sayuran caisim yang belum dimanfaatkan. Salah satu alternatif adalah memanfaatkan sisa sayuran caisim menjadi produk olahan yang disebut dengan nugget caisim. Tujuan penelitian ini untuk mengkaji pemanfaatan sayuran caisim grade B menjadi nugget caisim sebagai upaya inovasi olahan. Metode yang digunakan meliputi analisis sikap konsumen (model Fishbein), analisis nilai tambah Hayami, serta analisis kelayakan usaha secara non finansial dan finansial. Aspek non finansial mencakup perencanaan produk, pasar, teknis, organisasi, SDM, dan kolaborasi. Hasil skor sikap konsumen dari 8 atribut terhadap nugget sebesar 158,75. Nilai tambah yang dihasilkan Rp139.158 dengan rasio nilai tambah sebesar 70%. Usaha dinyatakan layak dijalankan berdasarkan indicator NPV Rp112.308.237, IRR 54%, Net B/C 2,78, Gross B/C 1,35, dan Payback Period 4 tahun 5 bulan. Nabila Farm Lembang has leftover sorted mustard greens vegetables that have not been utilized. One alternative is to utilize the remaining mustard greens vegetables into a processed product called mustard greens nuggets. The purpose of this study was to examine the use of grade B mustard greens vegetables to produce mustard greens nuggets as a processing innovation. The methods used included consumer attitude analysis (Fishbein model), Hayami value added analysis, and non financial and financial business feasibility analysis. Non financial aspects included product planning, market, technical, organizational, human resource, and collaboration. The consumer attitude score for the nuggets based on 8 attributes was 158.75. The resulting added value was Rp139,158, with a value-added ratio of 70%. The business was declared feasible based on an NPV of Rp112,308,237, an IRR of 54%, a Net B/C of 2.78, a Gross B/C of 1.35, and a Payback Period of 4 years and 5 months.
