      Minuman Energi Saripati Ikan Sidat Indonesia (Anguilla bicolor) untuk Meningkatkan Daya Imun Tubuh

      Abstract
      Minuman energi merupakan suplemen atau tambahan pangan dengan efek meningkatkan energi serta kekuatan fisik. Penelitian ini adalah penelitian eksperimental yang mengkombinasikan penggunaan saripati ikan sidat Indonesia (Anguilla bicolor) sebagai bahan pembentuk minuman energi sehat terhadap daya imun tubuh. Berdasarkan hasil uji organoleptik parameter penampilan, aroma, viskositas dan rasa yang paling disukai oleh panelis adalah F2 dengan komposisi saripati ikan sidat Indonesia 80% dan madu 15% serta rataan nilai uji hedonik sebesar 3,77. Hasil uji analisis kimia kandungan gizi minuman energi saripati ikan sidat Indonesia mengandung protein (0,16%/100g), Asam lemak omega-3 (<1.6 mg/100g), Kandungan energi (46,72 kkal/100g), lemak total (0 gram), karbohidrat (11,52%/100 g), kadar Air 88,3% dan kadar abu 0,02%. Minuman ini dapat memenuhi klaim sebagai minuman berenergi sesuai dengan SNI 01-6684-2002 dengan takaran saji 250 ml maka dapat mendukung angka kebutuhan gizi laki-laki dan perempuan usia produktif 19-29 dengan kandungan protein, omega-3 dan bebas lemak.
       
      Energy drinks are supplements or food supplements with the effect of increasing energy and physical strength. This study is an experimental research that combines the use of eel extract (Anguilla bicolor) as an ingredient in forming healthy energy drinks for the body's immune system. Based on the results of the organoleptic test, the parameters of appearance, aroma, viscosity and taste that were most preferred by the panelists were F2 with a composition of 80% eel essence and 15% honey and an average hedonic test value of 3.77. The results of the chemical analysis test showed that the nutritional content of the energy drink was that eel fish contained protein (0.16%/100g), omega-3 fatty acids (<1.6 mg/100g), energy content (46.72 kcal/100g), total fat (0 grams), carbohydrates (11.52%/100 g), water content 88.3% and ash content 0.02%. This drink can claim as an energy drink in accordance with SNI 01-6684-2002 with a serving size of 250 ml, it can support the nutritional needs of men and women of productive age 19-29 with protein, omega-3 and fat-free content.
