      Uji Hedonik Terhadap Minuman Empon Empon dengan Penambahan Lemon Cui (Citrus microcarpa)

      Abstract
      Empon-empon adalah jenis tanaman herbal seperti jahe, kunyit, kencur dan banyak lainnya yang bermanfaat untuk meningkatkan daya tahan tubuh. Lemon cui (Citrus microcarpa) merupakan salah satu jenis tanaman jeruk yang mampu meningkatkan sistem imunitas tubuh. Penelitian ini dilakukan untuk melihat pengaruh jumlah penggunaan lemon cui sebagai bahan tambahan dalam minuman empon-empon yang diharapkan dapat diterima oleh panelis maupun konsumen. Desain yang digunakan yaitu desain ekperimental dengan populasi mahasiswa program studi MIJMG Sekolah Vokasi IPB angkatan 60. Uji Hedonik dilakukan pada 62 panelis. Minuman terbagi menjadi 3 formulasi F1 menggunakan 25 ml perasan lemon cui, F2 menggunakan 50 ml dan F3 menggunakan 75 ml. Hasil uji hedonik menunjukkan F2 sebagai formula terpilih yang mengandung vitamin C sebanyak 27 mg yang dapat disimpan selama 1–2 hari pada suhu ruang dan 5–7 hari dalam lemari pendingin. Saran untuk penelitian ini adalah perlu dilakukan analisis kandungan gizi melalui uji laboratorium untuk mendapatkan hasil perhitungan kandungan vitamin A dan B-Karoten yang lebih akurat.
       
      Empon-empon is a type of herbal plant such as ginger, turmeric, kencur and many others that are useful for increasing the body's immune system. Lemon cui (Citrus microcarpa) is a type of citrus plant that can increase the body's immune system. This study was conducted to see the effect of the amount of lemon cui used as an additional ingredient in empon-empon drinks that are expected to be accepted by panelists and consumers. The design used was an experimental design with a population of MIJMG study program students, IPB Vocational School, batch 60. Hedonic tests were conducted on 62 panelists. The drinks were divided into 3 formulations F1 using 25 ml of lemon cui juice, F2 using 50 ml and F3 using 75 ml. The results of the hedonic test showed F2 as the selected formula containing 27 mg of vitamin C which can be stored for 1-2 days at room temperature and 5-7 days in the refrigerator. The suggestion for this study is that it is necessary to conduct a nutritional content analysis through laboratory tests to obtain more accurate results for calculating vitamin A and B-Carotene content.
