      Abstract
      Kelapa merupakan tanaman serbaguna dimana daging buah, batang pohon, kulit, akar pohon, tempumng, bagian daun, lidi dan air kelapanya pun dapat dimanfaatkan. Air kelapa dimanfaatkan menjadi jenis makanan olahan yang disebut nata de coco yang merupakan hasil fermentasi air kelapa oleh suatu bakteri yaitu Acetobacter xylinum.
