      Pengaruh Kesadaran Kesehatan terhadap Niat Pembelian Susu Sapi dan Susu Kedelai di Wilayah Jabodetabek

      Abstract
      Beberapa tahun ke belakang telah terjadi pertumbuhan ekonomi yang semakin membaik dan masyarakat yang semakin sadar terhadap kesehatan sehingga menyebabkan terjadinya perubahan perilaku konsumsi dan kebutuhan bahan pangan di masyarakat. Hal tersebut juga menyebabkan permintaan terhadap bahan pangan semakin meningkat. Namun berdasarkan data yang telah diperoleh, konsumsi susu di Indonesia masih rendah bahkan cenderung menurun. Padahal susu merupakan salah satu bahan pangan penting bagi kesehatan tubuh. Hal tersebut dapat dikarenakan adanya peralihan konsumsi masyarakat dari susu berbasis hewani menjadi susu berbasis nabati yang didasarkan pada alasan kesehatan, pola makan sehat, dan cita rasa. Susu berbasis nabati seperti susu kedelai memiliki kandungan nutrisi yang tidak kalah dibandingkan susu berbasis hewani. Susu kedelai juga memiliki berbagai khasiat bagi tubuh. Berdasarkan penelitian-penelitian empiris terdahulu, didapatkan bahwa kesadaran kesehatan, kepercayaan, dan faktor-faktor utama dari theory of planned behavior (TPB) yaitu sikap, norma subjektif, dan kontrol perilaku yang dirasakan memiliki pengaruh dalam pembentukan niat individu dalam mengonsumsi suatu produk. Sehingga penting dilakukan penelitian mengenai pengaruh kesadaran kesehatan terhadap niat pembelian susu sapi dan susu kedelai. Data primer diperoleh dari pengisian kuesioner online melalui Google Form. Penelitian ini dilaksanakan di Jakarta, Bogor, Depok, Tangerang, dan Bekasi (Jabodetabek) pada bulan Oktober 2023 sampai bulan Agustus 2024. Metode pengambilan sampel yang digunakan pada penelitian ini yaitu metode voluntary response sampling. Pada penelitian ini dibutuhkan sebanyak 150 responden. Metode analisis data yang digunakan yaitu analisis deskriptif, analisis structural equation modelling-partial least square (SEM-PLS), dan analisis importance-performance matrix analysis (IPMA). Penelitian ini menghasilkan beberapa temuan. Pertama, niat pembelian pada susu sapi lebih tinggi dibandingkan niat pembelian pada susu kedelai. Kedua, variabel kesadaran kesehatan tidak berpengaruh signifikan terhadap niat pembelian susu sapi namun berpengaruh signifikan terhadap niat pembelian susu kedelai serta variabel kepercayaan, sikap, norma subjektif, dan kontrol perilaku yang dirasakan berpengaruh signifikan terhadap niat pembelian susu sapi dan susu kedelai. Ketiga, variabel kepercayaan dan norma subjektif menjadi variabel prioritas untuk ditingkatkan untuk meningkatkan niat pembelian pada susu sapi dan susu kedelai.
       
      In the past few years there has been an improving economic growth and the condition that people are becoming more conscious about health, hence it causes changing in consumption behavior and foodstuffs need in society. Hence, it also causes the foodstuffs demand is increasing. However, based on data, consumption of milk in Indonesia is still under decent rate and even decreases gradually even though milk is one of the important foodstuffs for body health. It can be caused by changing in consumption from animal-based milk into plant-based milk because of health issue, healthy diet, and taste. Plant-based milk like soy milk contains nutritions which are moderately beneficial compared to animal-based milk. Soy milk also contains several efficacies for human body. Referencing to prior empirical researches, health consciousness, trust, and main factors of theory of planned behavior (TPB) which are attitude, subjective norms, and perceived behavioral control have influence in forming individual intention in consuming a product. Hence, it is important to conduct a research concerning about health consciousness influence toward purchase intention to cow milk and soy milk. Primary data was obtained by fulfillment of online questionnary through Google Form. This research was conducted in Jakarta, Bogor, Depok, Tangerang, dan Bekasi (Jabodetabek) from October 2023 until April 2024. This research used voluntary response sampling as sampling method. This research required 150 respondents. This research used descriptive analysis, structural equation modellingpartial least square (SEM-PLS) analysis, and importance-performance matrix (IPMA) analysis as data analysis methods. This research generates several fIndings. Firstly, purchase intention to cow milk is bigger compared to soy milk. Secondly, health consciousness variable does not significantly influence purchase intention toward cow milk, yet significantly influence purchase intention toward soy milk and trust, attitude, subjective norms, and perceived behavioral control variables significantly influence purchase intention toward cow milk and soy milk. Thirdly, trust and subjective norms variables are the priorities to be improved in order to escalate purchase intention toward cow milk and soy milk.
