      Abstract
      Permasalahan yang kerap terjadi dalam industri pangan adalah food loss dan food waste seperti yang terjadi pada PT. Tujuh-Tujuh Sejahtera. Peneliti menggunakan salah satu hasil food loss telur berupa telur retak yang diubah menjadi produk baru yang disebut dengan randang talua. Penelitian ini menggunakan desain eksperimental dengan pendekatan kuantitatif dimana bersifat menguji. Rancangan yang digunakan untuk penelitian ini adalah Rancangan Acak Lengkap (RAL) dengan satu faktor dan tiga taraf formulasi. Pada 4 butir telur retak yang dihasilkan oleh food loss telur dapat menghasilkan 1000 gram kerupuk randang talua dengan formula yang terpilih adalah formula F1. Pengujian laboratorium terhadap produk randang talua berada pada batas aman dengan nilai ALT
       
      Problems that often occur in the food industry are food loss and food waste as happened at PT Tujuh-Tujuh Sejahtera. Researchers use one of the results of egg food loss in the form of cracked eggs which are converted into a new product called randang talua. This research uses an experimental design with a quantitative approach which is testing. The design used for this research is a completely randomized design (CRD) with one factor and three levels of formulation. In 4 cracked eggs produced by egg food loss can produce 1000 grams of randang talua crackers with the selected formula is formula F1. Laboratory testing of randang talua products is within safe limits with ALT values
