      Pemurnian Bertingkat untuk Meningkatkan Kualitas Minyak Mata Tuna

      Abstract
      Mata tuna hasil samping industri masih belum dimanfaatkan secara optimal. Salah satu cara pemanfaatan mata tuna ialah dengan mengekstraksi minyaknya, namun, tingginya kandungan PUFA minyak ikan menyebabkannya rentan mengalami oksidasi. Salah satu adsorben yang dapat digunakan untuk menurunkan jumlah produk oksidasi minyak ialah magnesol XL. Penelitian bertujuan menentukan konsentrasi magnesol yang dapat ditambahkan dan teknik pemurnian bertingkat yang dapat diaplikasikan guna menurunkan parameter oksidatif minyak mata tuna. Penelitian dibagi menjadi dua tahapan, yaitu penentuan konsentrasi magnesol dengan perlakuan konsentrasi 1%, 3%, dan 5% dan pemurnian bertingkat menggunakan konsentrasi magnesol terpilih. Konsentrasi magnesol 5% mampu menurunkan parameter oksidatif terbesar dengan nilai akhir FFA: 0,27%; PV: 16 meq/kg; nilai anisidin: 6,30 meq/kg; dan TOTOX: 38,30 meq/kg. Magnesol 5% selanjutnya digunakan untuk permurnian bertingkat dengan tahapan degumming- netralisasi-bleaching (DNB), netralisasi-bleaching (NB), dan netralisasi-bleaching- netralisasi-bleaching (NBNB). Hasil terbaik diperoleh melalui tahapan NBNB, menghasilkan FFA: 0,16%; PV: 39,00±0,50 meq/kg; nilai anisidin 31,23±1,10 meq/kg dan TOTOX 109,23±2,08. Minyak dengan nilai parameter oksidatif yang tinggi masih perlu dimurnikan mencapai hasil yang memenuhi standar.
       
      Industrial by-products of tuna eye have not been optimally utilized yet. One approach to use tuna eye is to extract the oil, however, the high PUFA content of fish oil makes it susceptible to oxidation. One of the adsorbents that can be used to reduce the oil oxidation products is magnesol XL. The aims of this study were to determine the concentration of magnesol that could be added and the purification technique that could be applied to reduce the oxidative parameters of tuna eye oil. The research was divided into two stages, namely determining the concentration of magnesol with concentrations of 1%, 3%, and 5% and purification stages. The use of 5% magnesol was able to reduce the largest oxidative parameters with FFA values: 0.27%; PV: 16 meq/kg; anisidin value: 6.30 meq/kg; and TOTOX: 38.30 meq/kg. Magnesol 5% is then used for multilevel purification with the stages of degumming-neutralization-bleaching (DNB), neutralization-bleaching (NB), and neutralization-bleaching-neutralization-bleaching (NBNB). The best results were obtained through the NBNB stage, producing FFA: 0.16%; PV: 39.00±0.50 meq/kg; anisidin value 31.23 ± 1.10 meq/kg and TOTOX 109.23 ± 2.08. Oils with high oxidative parameter values still need improvement to achieve results that meet standards.
