Ikan tuna (Thunnus albacares) merupakan jenis ikan yang sangat penting dalam pengembangan bidang perikanan khususnya di daerah perairan Teluk Tomini Provinsi Gorontalo. Ikan tuna biasanya menjadi bahan baku industri yang diekspor ke luar negeri dan sebagian kecil di pasar lokal. Penanganan yang masih tradisional tidak luput dari minimnya pengetahuan dan ketrampilan nelayan-nelayan kecil. Secara umum penanganan ikan segar, terutama yang dilakukan oleh nelayan masih sangat memprihatinkan. Penanganan yang kurang hati-hati serta kurang diterapkannya sistem rantai dingin sejak ikan ditangkap sampai ke tangan konsumen menyebabkan terjadinya proses kemunduran mutu yang cepat. Oleh karena itu, perlu dilakukan penelitian tentang studi perubahan mutu daging terang tuna. Tuna (Thunnus albacares) is the kind of fish that is very important in the development of fisheries field, especially in the waters of Tomini Gulf, Gorontalo Province. Tuna usually becomes the raw materials of industry which is sent to abroad and partly marketed in local market. The traditional treatment still cannot be separated from the lack of knowledge and the skills of small fishermen. In general, the handling of fresh fish, especially those who carried out by fishermen are still very disappointed. Careless handling and less of applying the cold chain system since the fish is harvested until sent to the consumer carry the quality decrease fastly. Therefore, study of quality changing of tuna light flesh is very important to be conducted.
