      Abstract
      Pasteurized Crab Meat merupakan salah satu ekspor terbesar hasil perikanan di Indonesia. Unit Pengolahan Ikan (UPI) menerima bahan baku berupa daging rajungan dari miniplant, hal ini menyisakan limbah rajungan yang cukup besar karena sekitar 60% bagian tubuh rajungan adalah cangkang. Penelitian terdahulu telah memberikan informasi bahwa limbah rajungan memiliki potensi pemanfaatan dan dapat meningkatkan nilai ekonomi limbah rajungan tersebut. Penelitian ini bertujuan memetakan rantai pasok terkait pemanfaatan limbah rajungan, termasuk menghitung potensi limbah, kapasitas produksi, nilai ekonomi dan identifikasi alternatif pemanfaatan limbah rajungan. Metode yang dilakukan dengan deskripsi kualitatif, benefit transfer, dan analisis pendapatan. Data hasil penelitian berhasil memetakan rantai pasok terkait pemanfaatan limbah rajungan di 8 Provinsi berdasarkan pada 37 Unit Pengolahan Ikan yang mengolah pasteurized crab meat dan 148 miniplant pemasok bahan baku. Responden memilih kitosan sebagai alternatif pemanfaatan limbah cangkang rajungan. Tempat pengelolaan limbah terpadu (TPLT) merupakan rencana implementasi pemanfaatan dan pengelolaan untuk meningkatkan nilai ekonomi limbah rajungan. Hal ini didukung oleh dimensi pentahelix yang terdiri dari pemerintah, industri, akademisi, media dan masyarakat. Kata Kunci: limbah, pemanfaatan, pengelolaan, pentahelix, rajungan  
       
      Pasteurized Crab Meat is one of the largest exports of fishery products in Indonesia. The Fish Processing Unit (UPI) raw materials in the form of whole crab from the miniplant, thus leaving a fairly large crab waste because about 60% of the crab is the shell. Previous research has provided information that crab waste has potential utilization and can increase the economic value of the crab waste. This study aims to mapping supply chains related to the utilization of crab waste, including calculating the waste potential, production capacity, economic value and alternative utilization of crab waste. The method used is qualitative description, benefit transfer, and income analysis. Data from the research were able to map the supply chain of crab waste utilization in 8 provinces based on 37 fish processing units that process pasteurized crabmeat and 148 miniplant suppliers of raw materials. Respondents chosing chitosan as an alternative of shell waste utilization. Integrated waste management site (IWMS) is an implementation plan for utilization and management to increase the economic value of crab waste. This is supported by the pentahelix dimension consisting of government, industry, academia, media and society. Keywords: crab, management, utilization, pentahelix, waste
