Penerapan higiene dan sanitasi dilakukan untuk mencegah terjadinya kontaminasi pada daging. Tujuan penelitian ini mengevaluasi penerapan higiene dan sanitasi Unit Pemotongan Hewan di Kecamatan Margoyoso. Unit Pemotongan Hewan selanjutnya disebut dengan Tempat Pemotongan Hewan (TPH). Penelitian dilakukan merujuk pada penilaian kelayakan dasar Nomor Kontrol Veteriner. Penentuan lokasi dilakukan secara purposive sampling. Pengambilan data dilakukan dengan metode pengamatan dan wawancara. Data yang diperoleh dianalisis secara deskriptif. Terdapat 72 jenis indikator yang diamati pada setiap TPH. Hasil pengamatan pada TPH-1 ditemukan penyimpangan mayor sebanyak 20 jenis, penyimpangan minor sebanyak 36 jenis dan tanpa penyimpangan sejumlah 16 jenis, sedangkan pada TPH-2 ditemukan penyimpangan mayor sebanyak 18 jenis, penyimpangan minor terdiri atas 37 jenis dan tanpa penyimpangan 17 jenis. Berdasarkan hasil pengamatan TPH-1 dan TPH-2 dikategorikan pada tingkat III (cukup). Penerapan higiene dan sanitasi pada 2 TPH Kecamatan Margoyoso masih jauh dari sempurna. Perbaikan sarana dan prasarana serta pelatihan tentang pentingnya higiene dan sanitasi pada proses produksi perlu dilakukan, sehingga pelaksanaannya dapat lebih baik dan dapat meningkatkan kualitas produk. The implementation of hygiene and sanitation was to prevent contamination of meat. The purpose of this research was to evaluate the application of hygiene and sanitation at the slaughterhouse in Margoyoso District. The research was conducted based on the requirement of Veterinary Control Number. The slaughterhouse were called the TPH. Research location selection by purposive sampling. Data were collected by observation and interviews. The data obtained were analyzed descriptively. There are 72 items indicators was assessed. The results showed that TPH-1 found 20 items major deviations, 36 items minor deviations, and 16 items without deviations. While in TPH-2 found 18 items major deviations, 37 items minor deviations, and 17 items without deviations. Both slaughterhouses classified at level three (fair). The application of hygiene and sanitation at the slaughterhouses in Margoyoso District needs to be improved. The improvement on facilities, infrastructure and training on hygiene and sanitation were needed to improve the production processes and product quality.
