dc.description.abstractopi merupakan salah satu produk hasil perkebunan Indonesia yang menjadi salah satu komoditas ekspor. Salah satu jenis kopi yang menjadi komoditas ekspor yaitu kopi arabika kintamani. Tingginya produksi dan jumlah ekspor kopi, memerlukan teknik atau metode khusus yang dapat menentukan kualitas biji kopi secara cepat dan akurat. Salah satu teknologi yang diharapkan dapat mengukur kandungan kimia biji kopi secara cepat dan akurat yaitu Near Infrared Spectroscopy (NIRS). Tujuan dari penelitian ini yaitu untuk menentukan kandungan kimia biji kopi arabika kintamani yang berupa kadar air dan kandungan protein secara nondestruktif dengan menggunakan near infrared spectroscopy (NIRS). Data spektrum NIRS diolah menggunakan metode normalisasi, MSC, SNV, turunan pertama Savitzky-Golay (dg1) dan turunan kedua Savitzky-Golay (dg2). Metode kalibrasi yang digunakan adalah Partial Least Square (PLS) dan Principal Component Regression (PCR). Hasil penelitian menunjukkan bahwa model kalibrasi terbaik untuk prediksi kadar air adalah menggunakan PLS dengan data spektrum original dan faktor 9 (r = 0,71; SEC = 0,15%; SEP = 0,18%; CV = 1,65%; RPD = 1,03 dan konsistensi sebesar 82,11%), sedangkan untuk kandungan protein yaitu menggunakan PLS dengan pengolahan data spektrum normalisasi dan faktor 10 (r = 0,86; SEC = 0,59%; SEP = 0,67%; CV = 4,83%; RPD = 1,56 dan konsistensi sebesar 88,01%). Penelitian ini menunjukkan bahwa model NIRS yang dikembangkan dapat digunakan untuk penentuan kandungan protein kopi kintamani secara nondestruktif, tetapi tidak untuk kadar air. dc.description.abstractCoffee is one of Indonesia's plantation products which is an export commodity. One type of coffee that is an export commodity is Kintamani Arabica coffee beans. The high production and volume of coffee exports requires special techniques or methods to determine the quality of coffee beans quickly and accurately. One of technology that is expected to measure the chemical content of coffee beans quickly and accurately is Near Infrared Spectroscopy (NIRS). The purpose of this research was to determine the chemical content of Kintamani Arabica coffee beans in the form of moisture and protein content non-destructively by using near infrared spectroscopy (NIRS). NIRS spectrum data were processed using the normalization, MSC, SNV, Savitzky-Golay first derivative (dg1) and Savitzky-Golay second derivative (dg2) methods. The calibration and validation methods used were Partial Least Square (PLS) and Principal Component Regression (PCR). The results showed that the best calibration model for water content prediction was using PLS with original spectral data and a factor of 9 (r = 0.71; SEC = 0.15%; SEP = 0.18%; CV = 1.65%; RPD = 1.03 and consistency of 82.11%), while for the protein content using PLS with spectrum data processing normalization and a factor of 10 (r = 0.86; SEC = 0.59%; SEP = 0.67%; CV = 4.83%, RPD = 1.56, and consistency of 88.01%). This research shows that the developed NIRS model can be used for non-destructive determination of protein content, but not for water content.
