Abstract: Kebersihan merupakan syarat yang sangat penting dalam suatu industri. Cleaning in place (CIP) merupakan sistem pembersihan mesin peralatan yang digunakan dalam proses produksi. Pada dasarnya, sistem CIP merupakan sistem pembersihan yang dilakukan tanpa adanya pembongkaran alat-alat atau mesin produksi. Proses CIP dilakukan dengan beberapa tahap yaitu pembilasan awal, pencucian dengan detergen alkali (basa), pembilasan, pencucian dengan detergen asam, dan pembilasan akhir. Penelitian ini bertujuan untuk mengidentifikasi pengaruh konsentrasi dan kecepatan aliran detergen terhadap efisiensi sistem CIP pada mesin UHT susu. Pencucian pada mesin UHT dilakukan menggunakan detergen basa dan detergen asam dengan konsentrasi yang berbeda beda. Sampel yang dianalisis adalah larutan detergen basa dan asam, sampel air proses, sampel air bilasan awal dan sampel air bilasan akhir CIP. Analisis yang dilakukan adalah uji deskriptif, uji statistik ANOVA dengan dua arah, dan uji lanjutan duncan untuk mengetahui pengaruh konsentrasi dan kecepatan aliran detergen terhadap efisiensi sistem CIP. Pemeriksaan air bilasan akhir CIP menggunakan metode membrane filter dan total plate count (TPC) dan identifikasi bakteri. Konsentrasi dan kecepatan aliran detergen yang direkomendasikan adalah konsentrasi detergen basa 2,0% dan asam 1,5% dan kecepatan aliran detergen 2,22 dan 2,39 m/s.
Cleanliness is a very important requirement in any industry. Cleaning in Place (CIP) is a cleaning system for the machinery and equipment used in the production process. Essentially, the CIP system is a cleaning method that is performed without disassembling the production equipment or machines. The CIP process is conducted in several stages, including initial rinsing, washing with alkaline detergent, rinsing, washing with acid detergent, and final rinsing. This study aims to identify the effects of detergent concentration and flow rate on the efficiency of the CIP system in UHT milk machines. The cleaning of the UHT machines carried out using alkaline and acidic detergents with varying concentrations. The samples analyzed were alkaline and acid detergent solutions, process water samples, initial rinse water samples, and final CIP rinse water samples. The analyses conducted were descriptive tests, two-way ANOVA statistical tests, and duncan post-hoc test to determine the influence of detergent concentration and flow rate on the efficiency of the CIP system. The final CIP rinse water was examined using the membrane filter method, total plate count (TPC), and bacterial identification. The recommended detergent concentration and flow rate are 2.0% base and 1.5% acid detergent concentration, and a detergent flow rate of 2.22 and 2.39 m/s.
