Papuan nutmeg (Myristica argentea Warb) is native to Papua Island that has been an export commodity but has not been diversified into various products optimally. Seed and mace of Nutmeg are exported in the whole form. This research aim to analyze essential oil composition of seed and mace of Papuan nutmeg. However, moisture and fat content were also analyzed since they were major components in nutmeg. Moisture content was analyzed by azeotropic distillation method and fat content was analyzed by Soxhlet’s method. Essential oil was extracted using Likens-Nickerson method (Simultaneous Distillation Extraction). The results showed that moisture content of M argentea Warb at the age of four month were 74.84 % and 26.71 % in seed and mace, respectively. Moisture content of M argentea Warb at the age of eight month were 19.25 % and 19.30 % in seed and mace, respectively. Fat content of M argentea Warb at the age of four month were 19.83 % and 27.31 % in seed and mace respectively. Fat content of M argentea Warb at the age of eight month were 23.47 % and 21.08 % in seed and mace, respectively. The essential oil of M argentea Warb at the age of four month were 9.22 % and 6.78 % in seed and mace respectively, while at the age of eight month were 3.04 % and 3.33 % in seed and mace respectively.
