Evaluasi Penerapan GRP Penanganan Produk Pangan Segar di Hero
Abstract
Demand for food safety assurance is the pressure for the government to immediately ratify GRP regulation in Indonesia, through the preparation of standards and guidelines for GRP. Good Retailing Practices (GRP) in the food sector is defined as the practices recommended in the retail business to ensure that food products sold at retail are safe to eat, or free of risk that can interfere with human health, attention to health and safety of workers, and minimize negative impacts on the environment. GRP scope includes the correct practices and hygienic. Hero Supermarket Gatot Subroto (Hero Gatsu) as one of the modern retail industry has undergone an inspection related to GRP. Inspection refers to the GRP inspection guidelines issued by the Public Health Agency of the City of San Bernardino, California, United States (ABC Retail Food Inspection Guide). Inspection methods used to evaluate the overall state of Hero Gatsu practices related to sanitation and hygiene. Evaluation carried out on the locations used during handling of fresh food products, ranging from reception to sales. Based on the results of inspections, the application of GRP in Hero Gatsu obtained a value of 71 points. Scale application of GRP is at a scale of 70-79, or the status of "C” which means, generally unacceptable in food handling practices and overall general food facility maintenance and sanitation. This status indicates that the retail industry has been already good implementation in food handling practices and food facilities maintenance and sanitation, just need to fix the parts that are considered critical as the cause of the origin of food hazards. The application of GRP is merely a trial because of the unavailability of standards and guidelines for inspection of GRP in Indonesia. Analysis of violations aspects GRP aims to determine the cause of the violation and is useful in determining alternative solutions for Hero Gatsu.
