Sosis nabati merupakan produk olahan tiruan daging berbahan dasar bahan-bahan nabati yang dapat menjadi alternatif pangan bagi remaja gizi lebih dan gizi kurang. Penelitian ini bertujuan mengembangkan produk sosis nabati tinggi serat berbasis kacang merah, tepung kacang koro pedang, dan biji chia. Penelitian menggunakan Rancangan Acak Lengkap (RAL) satu faktor tiga perlakuan (F1, F2, dan F3). Analisis statistik menggunakan SPSS versi 27.0, menggunakan uji Shapiro wilk dan uji Kruskal-Wallis. Uji organoleptik melibatkan 33 panelis semi terlatih. Temuan uji organoleptik di aspek warna, penampilan, aroma, tekstur, rasa, serta keseluruhan menunjukkan F3 menjadi formula terpilih dengan rasio kacang merah, tepung kacang koro pedang serta biji chia (42%:37%:21%). Kandungan gizi 100g formula terpilih sosis yaitu energi 166 kkal; protein 8,4%; lemak total 3,9%; karbohidrat 24,2%; dan serat pangan 13,27%. Formula terpilih sosis dapat menyumbang sekitar 20% serat per takaran saji sehingga diklaim sebagai produk tinggi serat. Estimasi harga jual sosis yaitu Rp 8.000,00 per takaran saji.; Plant-based sausage is a meat-imitation product made from plant-based ingredients that can serve as an alternative  food source for overweight and undernourished adolescents. This study aimed to develop a high-fiber plant-based sausage based red kidney beans, jack bean flour, and chia seeds. The research design used was a one-factor Completely Randomized Design (CRD) with three treatments (F1, F2, and F3). Statistical analysis was performed using SPSS version 27.0, utilizing the Shapiro-Wilk test and the Kruskal-Wallis test. The organoleptic test involved 33 semi-trained panelists. Organoleptic test result regarding on the aspects of  appearance, color, aroma, texture, taste, and overall acceptability identified F3 as the selected formula, with a ratio of red kidney beans, jack bean flour, and chia seeds (42%:37%:21%). The nutritional content per 100g of the selected sausage formula was: 166 kcal of energy; 8.4% protein; 3.9% total fat; 24.2% carbohydrates; and 13.27% dietary fiber. The selected sausaged formula could contributes approximately 20% of the dietary fiber per serving, allowing it to be classified as a high-fiber product. The estimated selling price for the sausage formula is Rp 8,000.00 per serving size.

Rendahnya asupan serat pada masyarakat yang dapat meningkatkan risiko berbagai penyakit degeneratif. Salah satu upaya yang dapat dilakukan adalah pengembangan bahan pangan fungsional berupa minuman serbuk berbahan okra dan oats yang kaya serat pangan. Penelitian ini bertujuan membuat minuman serbuk instan dari bahan pangan fungsional tinggi serat yang dapat disukai. Penelitian ini dilaksanakan pada bulan Januari hingga Mei 2026. Formulasi okra dan oats pada penelitian ini yaitu F1 (70:30), F2 (60:40), F3 (50:50). Hasil penelitian menunjukkan bahwa formula F3 menjadi formula terpilih melalui metode Weighted Sum Model (WSM). Kontribusi kandungan serat berdasarkan acuan label gizi (ALG) umum yaitu sebesar 20%, sehingga menjadikan produk minuman instan okra dan oats dapat diklaim sebagai tinggi serat.; Low dietary fiber intake among the population may increase the risk of various degenerative diseases. One effort to address this issue is the development of functional food products, such as instant powdered beverages made from fiber-rich ingredients including okra and oats. This study aimed to develop a high-fiber functional instant powdered beverage that is acceptable to consumers. The research was conducted from January to May 2026. Three formulations with different proportions of okra and oats were evaluated: F1 (70:30), F2 (60:40), and F3 (50:50). The results showed that formulation F3 was selected as the best formulation based on the Weighted Sum Model (WSM) method. The dietary fiber content of the selected formulation provided 20% of the Daily Reference Intake (DRI), based on the Indonesian Nutrition Facts Label guidelines, allowing the product to be classified as a high-fiber beverage. Therefore, the developed instant powdered&#13;
beverage based on okra and oats has the potential to serve as a functional food product that supports adequate dietary fiber intake.

Ikan sidat Indonesia memiliki nilai gizi dan ekonomis yang tinggi, serta dapat dimanfaatkan menjadi produk olahan kabayaki. Produk kabayaki ikan sidat diproses melalui tahap sterilisasi, dikemas menggunakan retort pouch, dan disimpan pada suhu ruang. Penelitian ini bertujuan menganalisis daya simpan kabayaki ikan sidat pada suhu ruang (25–32°C) selama tiga bulan penyimpanan. Parameter yang diuji meliputi karakteristik kimia, mutu hedonik, dan mikrobiologi. Suhu penyimpanan dan kelembapan relatif diamati setiap pagi dan sore hari. Hasil pengamatan menunjukkan bahwa suhu penyimpanan dan kelembapan relatif berfluktuasi. Hasil uji mikrobiologi menunjukkan nilai Escherichia coli sebesar 0 MPN/g, Salmonella sp. negatif, dan Total Plate Count (TPC) selama 60 hari menunjukkan hasil &lt;10 koloni/g. Hari ke-75, nilai TPC mengalami peningkatan sebesar empat kali lipat. Kabayaki ikan sidat yang disimpan pada suhu ruang masih memenuhi persyaratan mutu penyimpanan hingga hari ke-60. Hal tersebut dibuktikan melalui pengujian TPC yang memenuhi persyaratan berdasarkan standar SNI 2712:2013 tentang ikan kaleng hasil sterilisasi.; Indonesian eel has high nutritional and economic value and can be processed into kabayaki. Eel kabayaki is processed through sterilization, packaged in retort pouches, and stored at room temperature. This study aimed to analyze the shelf life of eel kabayaki stored at room temperature (25–32 °C) over three months. The evaluated parameters included chemical characteristics, hedonic quality, and microbiological quality. Storage temperature and relative humidity were monitored daily in the morning and afternoon. The results showed that the storage temperature and relative humidity fluctuated. Microbiological analyses revealed Escherichia coli counts of 0 MPN/g, negative results for Salmonella sp., and Total Plate Count (TPC) of &lt;10 CFU/g up to day 60. On day 75, the TPC value increased fourfold. Eel kabayaki stored at room temperature met quality requirements up to day 60, as evidenced by TPC values complying with the Indonesian National Standard (SNI 2712:2013) for canned fish sterilization.

Adolescent girls require higher iron intake because monthly menstruation increases their risk of anemia. This study aimed to develop cupcakes made with red spinach flour as an iron-rich snack. The study employed a Completely Randomized Design (CRD) with three treatment groups: F1, F2, and F3. Data were analyzed using SPSS version 25.0 with the Kruskal–Wallis test followed by the Mann–Whitney post hoc test. The organoleptic evaluation identified F1 as the selected formulation, containing 60 g of red spinach flour. F1 provided 339 kcal of energy per 100 g, with 8.4% protein, 18.9% fat, 33.6% carbohydrates, and 7.53 mg of iron. Cupcakes made with red spinach flour have the potential to serve as an iron-rich snack alternative based on locally available food resources.; Remaja putri membutuhkan zat besi lebih tinggi karena mengalami menstruasi setiap bulan, sehingga berisiko mengalami anemia. Penelitian ini bertujuan mengembangkan cupcake substitusi tepung bayam merah sebagai kudapan tinggi zat besi. Penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan tiga perlakuan, yaitu F1, F2, dan F3. Data dianalisis menggunakan SPSS 25.0 dengan uji Kruskal-Wallis dan uji lanjut Mann-Whitney. Hasil uji organoleptik menunjukkan bahwa F1 merupakan formula terpilih dengan penggunaan tepung bayam merah sebanyak 60 gram. F1 mengandung energi 339 kkal/100 g; protein 8,4%; lemak 18,9%; karbohidrat 33,6%; dan zat besi 7,53 mg. Cupcake substitusi tepung bayam merah berpotensi menjadi alternatif kudapan tinggi zat besi berbasis pangan lokal.
