Penelitian ini bertujuan menganalisis penyebab cacat serta mengevaluasi efektivitas usulan perbaikan pada proses pengemasan biskuit menggunakan metode Six Sigma dengan pendekatan DMAIC (Define, Measure, Analyze, Improve, dan Control) di PT XYZ. Data diperoleh melalui observasi proses produksi, pencatatan jumlah cacat, serta wawancara dengan operator dan bagian Quality Control. Hasil penelitian menunjukkan bahwa cacat dominan adalah missalignment pada printing sebanyak 3.687 pcs atau 63,37% dari total defect. Analisis fishbone dan 5 Why menunjukkan bahwa faktor material merupakan penyebab utama terjadinya cacat. Tindakan perbaikan dilakukan melalui pergantian material film packaging dengan karakteristik permukaan yang lebih sesuai dan ketebalan yang lebih konsisten. Setelah implementasi perbaikan, jumlah cacat menurun dari 5.818 pcs menjadi 2.520 pcs, persentase cacat turun dari 1,85% menjadi 0,80%, nilai DPMO menurun dari 6.181 menjadi 2.677, serta level sigma meningkat dari 4,00 menjadi 4,29. Hasil penelitian menunjukkan bahwa penerapan Six Sigma dengan pendekatan DMAIC efektif dalam meningkatkan kualitas proses packaging dan mengurangi loss produksi di PT XYZ.; This study aimed to analyze the causes of defects and evaluate the effectiveness of improvement actions in the biscuit packaging process using the Six Sigma DMAIC (Define, Measure, Analyze, Improve, and Control) approach at PT XYZ. Data were collected through production observations, defect records, and interviews with production operators and the Quality Control department. The results showed that the dominant defect was printing misalignment, accounting for 3,687 units or 63.37% of the total defects. Fishbone and 5 Whys analyses identified the material factor as the main cause of the defect. Improvement was implemented by replacing the packaging film with material having more suitable surface characteristics and consistent thickness. After implementation, the number of defects decreased from 5,818 to 2,520 units, the defect rate decreased from 1.85% to 0.80%, the DPMO value decreased from 6,181 to 2,677, and the sigma level increased from 4.00 to 4.29. These findings indicate that the Six Sigma DMAIC approach effectively improved the packaging process quality and reduced production losses at PT XYZ.

Lettuce Red Coral sebagai bahan salad siap santap rawan tercemar mikroba karena dikonsumsi tanpa pemanasan. Penelitian ini bertujuan menentukan pengaruh konsentrasi klorin (0, 50, dan 100 ppm) dan lama perendaman (3, 5, dan 7 menit) terhadap Total Plate Count (TPC) dan mutu fisik, serta menetapkan kombinasi terbaik menggunakan Metode Perbandingan Eksponensial. Rancangan faktorial 3×3 dengan tiga ulangan dianalisis dengan uji Scheirer-Ray-Hare untuk TPC dan uji Friedman untuk mutu fisik. Konsentrasi klorin berpengaruh sangat nyata menurunkan TPC, sedangkan lama perendaman dan interaksinya tidak nyata. Konsentrasi 50 dan 100 ppm setara dan memenuhi standar di bawah 6.000 Log10 CFU/g, sementara perlakuan tanpa klorin mempertahankan mutu fisik terbaik. Kombinasi terbaik berdasarkan MPE adalah 100 ppm selama 7 menit, dengan 50 ppm selama 5 menit sebagai alternatif operasional yang setara secara keamanan mikrobiologis dan berisiko residu klorin lebih rendah.; Lettuce red coral used as a ready-to-eat salad ingredient is prone to microbial contamination as it is consumed without any heating step. This study aimed to determine the effect of chlorine concentration (0, 50, and 100 ppm) and soaking time (3, 5, and 7 minutes) on Total Plate Count (TPC) and physical quality, and to establish the best combination using the Exponential Comparison Method. A 3×3 factorial design with three replications was analyzed using the Scheirer-Ray-Hare test for TPC and the Friedman test for physical quality. Chlorine concentration significantly reduced TPC, whereas soaking time and its interaction were not significant. Concentrations of 50 and 100 ppm were equivalent and met the standard below 6.000 Log10 CFU/g, while the treatment without chlorine best preserved physical quality. The best combination based on MPE was 100 ppm for 7 minutes, with 50 ppm for 5 minutes as an operationally equivalent alternative carrying lower chlorine residue risk.

Produk egg yolk salt di PT XYZ diproduksi melalui pengendalian parameter total padatan terlarut, kadar garam, dan pH, namun produk dengan pH di luar batas spesifikasi masih ditemukan sehingga dikategorikan reject. penelitian ini bertujuan menganalisis kendali statistik atribut pH, penyebab ketidaksesuaiannya, rekomendasi perbaikan, serta efektivitas perbaikan tersebut menggunakan data observasi, wawancara, check sheet, dan pengujian pH yang dianalisis dengan bagan kendali x¯-R, diagram fishbone, verifikasi lapangan, dan evaluasi perbaikan. Hasil menunjukkan pH produk egg yolk salt belum terkendali secara statistik, dari 30 lot yang diambil 15 lot memiliki pH di luar spesifikasi, dengan 12 titik di luar batas pada bagan kendali x¯ dan 3 titik pada began kendali R. Penyebab utama berasal dari faktor material dan faktor measurement. Tindakan perbaikan berupa penyesuaian standar bahan baku telur dan penjadwalan ulang kalibrasi pH meter. Hasil dari tindakan perbaikan berhasil menurunkan titik di luar batas kendali pada bagan x¯ menjadi 2 dan bagan R menjadi terkendali, dengan seluruh 30 lot telah memenuhi spesifikasi pH.; Egg yolk salt products at PT XYZ are produced through the control of parameters such as total dissolved solids, salt content, and pH, yet products with pH values outside the specification are still found and classified as reject. This study aimed to analyze the statistical control of the pH attribute, the causes of its nonconformity, corrective action recommendations, and the effectiveness of the corrective actions, using data from observation, interviews, check sheets, and pH testing, analyzed using x¯-R control charts, fishbone diagrams, field verification, and post-correction evaluation. Results showed that the pH of egg yolk salt products was not statistically controlled of 30 lots sampled, 15 lots had pH values outside the specification, with 12 out-of-control points on the x¯-chart and 3 on the R-chart. The main causes originated from material and measurement factors. Corrective actions consisted of adjusting the egg raw material standards and rescheduling pH-meter calibration. As a result, out-of-control points on the x¯-chart decreased to 2, the R-chart became fully controlled, and all 30 lots met the pH specification.

Salah satu komoditas lokal yang memiliki potensi besar untuk dikembangkan &#13;
sebagai bahan baku susu nabati adalah kacang bogor (Vigna subterranea). Kacang &#13;
tersebut dikategorikan sebagai pangan lengkap (complete food) karena memiliki &#13;
komposisi nutrisi yang seimbang. Penelitian ini bertujuan menganalisis pengaruh &#13;
penambahan carboxymethyl cellulose (CMC) dan jenis perisa terhadap karakteristik &#13;
fisikokimia, stabilitas suspensi, serta penerimaan sensori susu kacang bogor (Vigna &#13;
subterranea). Penelitian menggunakan rancangan acak lengkap pola faktorial 3 × 4 &#13;
dengan tiga ulangan. Faktor pertama berupa konsentrasi CMC 0%, 0,25%, dan 0,50%, &#13;
sedangkan faktor kedua berupa tanpa perisa serta perisa vanila, susu, dan cokelat masing masing 0,20%. Parameter yang diuji meliputi warna, viskositas, densitas, total padatan &#13;
terlarut, derajat keasaman, stabilitas suspensi, serta atribut sensori penampakan, aroma, &#13;
rasa, warna, kekentalan, aftertaste, dan penerimaan keseluruhan menggunakan 40 panelis. &#13;
Data dianalisis menggunakan analisis ragam dua arah, dan uji lanjut Duncan pada taraf &#13;
5% dengan SPSS Statistics 25. Hasil menunjukkan bahwa peningkatan konsentrasi CMC &#13;
meningkatkan viskositas, densitas, dan total padatan terlarut serta memperlambat &#13;
pemisahan fase. CMC tidak berpengaruh nyata terhadap penerimaan sensori, sedangkan &#13;
jenis perisa memengaruhi beberapa atribut sensori. Formulasi CMC 0,25% dengan perisa &#13;
susu atau cokelat memberikan mutu fisikokimia, stabilitas, dan penerimaan terbaik.&#13;

the Quality Stability and Acceptance of Bambara Groundnut Plant-Based Milk. &#13;

Bambara groundnut (Vigna subterranea) is a local commodity with considerable &#13;
potential to be developed as a raw material for plant-based milk. This legume is &#13;
categorized as a complete food because it contains a balanced nutritional composition. &#13;
This study aimed to analyze the effects of carboxymethyl cellulose (CMC) addition and &#13;
flavor type on the physicochemical characteristics, suspension stability, and sensory &#13;
acceptance of Bambara groundnut plant-based milk. The first factor was CMC &#13;
concentration at 0%, 0.25%, and 0.50%, while the second factor consisted of no &#13;
flavoring, vanilla, milk, and chocolate flavorings, each at a concentration of 0.20%. The &#13;
evaluated parameters included color, viscosity, density, total soluble solids, pH, &#13;
suspension stability, and sensory attributes comprising appearance, aroma, taste, color, &#13;
thickness, aftertaste, and overall acceptance, involving 40 panelists. Data were analyzed &#13;
at a 5% significance level using SPSS Statistics 25. The results showed that increasing &#13;
CMC concentration increased viscosity, density, and total soluble solids while delaying &#13;
phase separation. CMC addition had no significant effect on sensory acceptance, &#13;
whereas flavor type significantly affected several sensory attributes. The formulation &#13;
containing 0.25% CMC combined with milk or chocolate flavoring provided the best &#13;
physicochemical quality, stability, and sensory acceptance.&#13;
