| dc.description.abstract | This study was aimed to determine the misslaughter of the broiler chicken slaughtering process sold at traditional market of Jombang, East Java. 450 samples were obtained from 90 traders; consisting of 44 traders in market 1, 22 traders in market 2 and 24 traders in market 3. The samples fixated with 10% formalin solution and prepared using a minor surgical instruments kit to identify the trachea, esophagus, and two internal carotid artery. This study showed that 168 samples (37.3%) did not meet the requirements for halal slaughter according to SNI N0.99002 2016 about halal slaughtering in poultry. Misslaughter were found on 81 samples (36.8%) from market 1, 24 samples (20%) from market 2, and 63 samples (57.3%) from market 3. Misslaughtered samples shows unfinished cut of the left internal carotid artery, right internal carotid artery, left and right internal carotid artery, and trachea and left internal carotid artery. Most case of misslaughter found was the unfinished cut of the left internal carotid artery by 94 samples (20.9%). The results of sample observations and questionnaire data collection showed that the high imperfections of slaughter results were found on the market applying method 1, namely the method of left hand holding wings and head, right hand slaughtering. In addition, the size of the chicken and the training of the slaughterer also affect the high imperfection of slaughter results. So it can be concluded that the imperfection of the chicken slaughter process in Jombang Regency is influenced by the slaughter method used, the size of the chicken and the training of the slaughterer. | id |
