dc.description.abstractPeptone is defi ned as a protein hydrolysate soluble in water and non-coagulable under heat. Fish hydrolysate-based peptone were produced through enzymatic hydrolysis from yellowstrapes sead muscle and it’s quality for bacterial growth were also evaluated. Th e hydrolysis processes were carried out on post rigor muscle with 0.26% (w/v) papain for 6 hours. Fish peptone had high protein level (74.17% wet basis) and contained essential amino acids such as histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, valine, and arginine. Th e solubility of fi sh peptone was 96.74%, with total nitrogen 11.86%; α-amino nitrogen 1.07 g/100 g; α-amino nitrogen per total nitrogen 9.02; and 0.41% saline. Optical density of bacteria growth on fi sh peptone higher than commercial peptone indicating that the fi sh peptone has higher capacity to support the growth of bacteria in simple media.id
