Bruguiera gymnorrhiza is one of the mangrove plants commonly used as food and traditional medicine, however there is lack of information as an antioxidant source. The aims of this research were to determine the chemical composition, bioactive components, antioxidant activity, and to investigate the ability of B. gymnorrhiza fruit extracts on inhibition of the formation of peroxides. B. gymnorrhiza was extracted with three solvents with different polarity, namely n-hexane, ethyl acetate, and methanol. Determination of antioxidant activity was conducted by using 1,1-diphenyl-2-picrylhidrazyl (DPPH) method. B. gymnorrhiza fruit had 62.92% water, 1.29% ash, 0,79% fat, 2.11% protein, and 32.91% carbohydrate. The results showed that the highest yield of crude extract was obtained by extraction with methanol, followed by extraction with ethyl acetate, and n-hexane. Methanol extract showed the highest antioxidant activity with an IC50 value of 9.42 ppm, while ethyl acetate and n-hexane extract were less active with IC50values of 443.61 ppm and 2256.13 ppm, respectively. Phytochemical analysis showed that methanol extract contained steroids, flavonoids, and tannins. The methanol extract with concentration of 250 ppm could inhibit the formation of peroxide with a peroxide number 0.21 Meq/kg in emulsion of oil.
