dc.description.abstractChitosan is non-toxic cationic polymer, biodegradable and has potential as antifungal agent to inhibit the growth of fungi. Chitosan as antifungal can be used in the storage of peanuts (Arachis hypogaea L.) as barrier to inhibit the growth of fungi that can produce mycotoxin. Aspergillus flavus and A. parasiticus produce aflatoxin. Aflatoxin cause liver disease such as cancer, cirrhosis and hepatitis. The purpose of this study was to determine the concentration of chitosan to prevent aflatoxin B1 contamination and to determine the chemical composition of peanuts after storage with chitosan administration. Method of the determining the aflatoxin B1 concentration used ELISA (Enzyme-Linked Immunosorbent Assay). The treatment on this study was the difference of chitosan concentration, such as 0%, 0.1% and 1%. The measurement was done on day 0, 15 and 30 after storage. The best result acquired at the treatment with chitosan 1% on day 30 (<0.3 ppb); with water moisture 9.30%. The chemical composition measured was moisture 9.30% ; ash 2.46%; protein 25.64%; fat 39.41%; crude fiber 6.58% and carbohydrate 16.62%.en
