dc.description.abstract | Dodol made from milk was a modification of regular dodol that usually use coconut milk as main ingredient. Previous experiment was failed to make dodol which met the standard, especially the fat content that far below the standard. The aim of this research was to assess physical, chemical, and organoleptic characteristics of dodol made from milk with cream addition as fat source. The results showed that dodol made from milk with cream addition did not affect significantly (P>0.05) on physical characteristics (yield, aw, hardness, chewiness). Chemical content analysis results showed significant differences (P<0.05) on ash, fat, and protein content. Ash and protein contents in dodol with 10% and 20% cream addition were significantly lower (P<0.05) than control. Fat content in dodol with 10% and 20% cream addition were significantly higher (P<0.05) than control. Hedonic quality test results showed dodol with 20% cream addition affected significantly (P<0.05) on color and aroma intensity. Meanwhile hedonic test results showed cream addition on dodol did not affect significantly (P>0.05) on acceptability of color, aroma, sweetness, and chewiness. Based on physical, chemical, and organoleptic characteristics, it can be concluded that cream can be used as fat source on dodol made from milk and 20% cream addition resulted in dodol that closest to available standard. | en |
