dc.description.abstract | Street-fried food is one kind of foods which mostly and frequently consumed by college students since they are easily found around campus. Thee frying oil used by the vendors commonly is repeated-used oil which must be oxydized and degradized. The general objective of this research was to analyze preference and habits of street-fried food consumption among Executive Student Board of IPB. The samples were 86 students, registered as Executive Student Board at any kinds of faculty, and not registered as students of Nutritional Science nor Food Technology Study Programs. The data were primary data, collected through interviewing with questionnaire. Nutritional status of the most samples were normal (64%) and tended to overweight (18,6%), andobesity level I (5.8%). The mode value of sample preference on fried foods tended to “average”; and only some kinds of food which prefered as “like” by samples, namely tahu isi, bakwan and donut. In general, the reason of samples consumed street-fried foods were hungry (45%) and the appropiate price (43%). The mostly consumed at around study times (55%) andat conducting organization activities (38%). The frequency of consumption of various street-fried foods in one last month was around 1,1 to 6,7 times per month, and mostly foods were consumed about 1–3 times/month or 1–2 times/week. Kinds of street-fried foods which frequently consumed were tempe, donut, tahu isi, and bakwan. The amount of street-fried food consumed per item of food was between 14 and 50 gram per once consuming; and totally of all of fried foods were 2684 gram per month, or in average 89,5 gram per day. This is amount was about two pieces of each food. The amount of food consumed meant that the amount of oil absorbed and consumed was 439 gram per month or about14,6 gram per day. The correlation test showed that there was a positive and significant correlation between street-fried food preference and consumption among samples (r=0,271, p=0,014). This means that the higher samples preference, the higher consumption of fried food. | en |
