dc.description.abstract | Star fruit is one of agricultural commodity which is perishable, that leads to quality declining and limited availability in market. Dried-candied star fruit processing is one of technology process alternatives in order to extend product shelf life. The research was based on technopreneurship program and consisted of three main stages such as initial business model identification, product profile development, and business model development. Initial model business was identified by determining assumptions of nine business model elements. Product profile development stage generated the best formula of dried-candied star fruit was immertion fruit in a solution of lime 0,1% for 1 hour with concentration of sugar solution 30%. Result of business model development in value propositions were as snack which is expected to be healthy and practical, free of preservatives, and contain vitamins for human body endurance. Customer segments were women aged 19–45 years old who would like to consume snacks and fresh or processed fruits. Revenue streams obtained by selling the product in channels such as sweet confectionary store, gift shop, retailer, and wholesaler. | en |
