dc.description.abstract | Mangosteen pericarp part with the highest percentage in the mangosteen fruit and can be developed into a powdered extract of mangosteen peel. The purpose of research is to know the processing of mangosteen peel extract powder using spray and drum dryers, as well as determine the effect of filler maltodextrin concentration on the characteristics of mangosteen peel extract powder. The manufacturing process includes extraction, the addition of filler material, and drying. The next mangosteen peel extract powder active compound tested xanthone and tannin. Test levels of xanthones mangosteen peel extract powder showed that spray drying results with 10% maltodextrin concentration is the highest content of tannin 0.39% and levels of spray drying results with 10% maltodextrin concentration is lowest content of 6.04%.
