dc.description.abstractObesity is caused as the results of an imbalance between energy intake and expenditure. Moreover, obesity is strong risk factor for various diseases, such as hypertension, arteriosclerosis, and diabetes mellitus. The aim of the present study was to assess the ability of roselle water extracts (RWEs) to inhibit lipase, α-glucosidase, and α-amylase in vitro activity, and the effect of pH digestion on the inhibitory activities. Fresh roselle flower was extracted by aquadest at 70, 85 and 100°C for 15 and 30 minutes. Results showed that RWEs without pH treatment had more than 80% inhibitory activity for lipase, α-glucosidase and α-amylase. But, RWEs with pH treatment mimic to pH of gastrointestinal tract, i.e roselle extracts was adjusted to pH 6,8 after reduced to pH 2 for 30 minutes previously, had no effect on α-glucosidase and slight inhibition on pancreatic lipase (3-41%), and pancreatic α-amylase (9-40%) activity. RWEs was suggested had an inhibitory activity on salivary α-amylase. Based on its strong α-amylase inhibitory RWEs appears to be a potential functional food for delimitate energy intakeen
