      Abstract
      Di Indonesia umbi-umbian merupakan sumber karbohidrat penting setelah beras dan jagung, namun sampai saat ini umbi-umbian yang popular dikembangkan hanyalah ubi kayu dan ubi jalar. Umbi minor lain mempunyai jenis dan jumlah yang sangat beragam, dan sampai saat ini belum dimanfaatkan secara optimal.
