dc.description.abstractThe isolation of chitin and analysis of chemical compounds from prawn (Penaelrs tnottodon) head and shell waste was done according to the Hong K. No method (1989). The result of proximate analysis indicate 90,38% protein. Amino acid analysis of the protein yeilded aspartic acid, glutamic acid, serine, histidine, glycine, threonine, tyrosine, alanine, valine, phenilalanine, isoleucine, leucine and lysine. The minerals of prawn waste consisted of phos horus and metal ions (ca2+,K +,Na+, MN2+,Fe3+, Cd2+,Pb2+,Zn2+,Cr2+,Mg2+, Hg2+)Where areas the prawn pigment arc astaxanhin and canthazanthin. Chitin content from prawn waste is 21%.id
