dc.description.abstractKopi Liberika (Coffea liberica) sebagai salah satu varietas kopi lokal Indonesia belum banyak diteliti karakteristiknya. Penelitian ini bertujuan menganalisis sifat fisikokimia, kandungan metabolit sekunder, dan aktivitas antioksidan biji kopi hijau Liberika dari Pulau Jawa. Metode penelitian meliputi analisis dimensi biji, warna, kadar proksimat, serta pengukuran total fenol, flavonoid, dan aktivitas antioksidan dengan metode DPPH, CUPRAC, dan FRAP. Data dilakukan analisis secara statistik untuk melihat perbedaan signifikan antar lokasi tempat tumbuh. Hasil analisis menunjukkan variasi karakteristik antar sampel pengujian. Sampel yang diambil dari Jawa Timur menunjukkan aktivitas antioksidan terbaik DPPH 44,49 mg TE/g, CUPRAC 271,19 mg TE/g, FRAP 10,35 mg TE/g serta kandungan fenol 7,43 mg GAE/g dan flavonoid 1,43 mg QE/g tertinggi dibandingkan sampel dari lokasi lainnya. Temuan ini mengindikasikan bahwa variasi geografis asal biji kopi liberika di Pulau Jawa dapat mempengaruhi perbedaan karakteristik fisikokimia, metabolit sekunder, dan aktivitas antioksidan.
dc.description.abstractLiberica coffee (Coffea liberica), one of Indonesia's local coffee varieties, has not been widely studied for its characteristics. This study aims to analyze the physicochemical properties, secondary metabolite content, and antioxidant activity of green Liberica coffee beans from Java. The research methods included analysis of bean dimensions, color, proximate content, and measurement of total phenols, flavonoids, and antioxidant activity using the DPPH, CUPRAC, and FRAP methods. Data were statistically analyzed to identify significant differences between growing locations. The analysis results showed variations in characteristics between test samples. Samples taken from East Java showed the best antioxidant activity with DPPH 44.49 mg TE/g, CUPRAC 271.19 mg TE/g, FRAP 10.35 mg TE/g, and the highest phenol content of 7.43 mg GAE/g and flavonoids 1.43 mg QE/g compared to samples from other locations. These findings indicate that geographic variations in the origin of Liberica coffee beans in Java can influence differences in physicochemical characteristics, secondary metabolites, and antioxidant activity.
