      Perancangan Tata Letak Unit Produksi Sayur Frozen di Agribusiness Technology Park (ATP) IPB Pasir Sarongge

      Abstract
      Badan Investasi dan Bisnis IPB University berupaya mengembangkan produk baru, yaitu sayur frozen sebagai solusi untuk mengurangi terjadinya kehilangan pangan (food loss) dan meningkatkan nilai tambah hasil pertanian. Badan ini akan bekerja sama dengan salah satu unit usahanya, yaitu Agribusiness Technology Park IPB Pasir Sarongge. Tantangan utama dalam pengembangan produk ini adalah merancang unit produksi yang efisien di dalam bangunan yang mengalami kerusakan dan memiliki keterbatasan ruangan. Penelitian ini bertujuan merancang tata letak unit produksi yang fungsional dan fleksibel untuk memproduksi lima jenis sayur frozen: ubi jalar dadu, terong potong, kentang utuh, jagung pipil, dan brokoli kuntum. Perancangan ini menggunakan metode Systematic Layout Planning (SLP) dan algoritma CORELAP untuk menyusun tata letak secara sistematis. Tahapan penelitian ini meliputi identifikasi aliran proses untuk setiap produk, analisis hubungan kedekatan aktivitas, perhitungan kebutuhan luas fasilitas, dan penyesuaian desain dengan batasan yang ada untuk memenuhi target kapasitas 180 kg/hari. Prototipe tata letak memiliki total luas sebesar 243,32 m² yang mampu mengakomodasi seluruh proses produksi. Rancangan ini mendukung aliran material satu arah (one-way flow) yang efisien, meminimalkan potensi kontaminasi silang, dan memiliki fleksibilitas untuk operasional multiproduk. Simulasi aliran material menunjukkan bahwa tata letak yang diusulkan berhasil mengoptimalkan jarak dan waktu perpindahan bahan, sehingga mendukung efisiensi operasional unit produksi secara keseluruhan.
       
      The Investment and Business Agency of IPB University seeks to develop a new product, frozen vegetables, as a solution to reduce food loss and increase the added value of agricultural products. The agency will collaborate with one of its business units, Agribusiness Technology Park IPB Pasir Sarongge. The primary challenge in this product development is designing an efficient production unit within a building that has sustained damage and has spatial limitations. This research aims to design a functional and flexible production unit layout to produce five types of frozen vegetables: diced sweet potato, chopped eggplant, whole potato, corn kernels, and broccoli florets. The design process utilizes the Systematic Layout Planning (SLP) method and the CORELAP algorithm to systematically arrange the layout. The research stages include identifying the process flow for each product, analyzing activity relationship closeness, calculating facility space requirements, and adapting the design to existing constraints to meet the 180 kg/day capacity target. The layout prototype has a total area of 243.32 m², capable of accommodating the entire production process. The design supports an efficient one way material flow, minimizes the potential for cross-contamination, and possesses the flexibility for multi-product operations. Material flow simulation shows that the proposed layout successfully optimizes material movement distance and time, thereby supporting the overall operational efficiency of the production unit.
