      Cemaran Escherichia coli dan Staphylococcus aureus pada Ikan Pindang Layang (Decapterus sp.) di Pasaran Kota Cirebon

      Abstract
      Penelitian ini bertujuan untuk mengetahui jumlah cemaran E. coli dan S. aureus serta menganalisis hubungan antara faktor karakteristik dan praktik dengan keberadaan E.coli dan S.aureus pada ikan pindang (Decapterus sp.) yang dijual di Pasar Kota Cirebon. Sebanyak 18 sampel diambil secara acak yang diperoleh dari 9 pedagang ikan pindang di Pasaran Kota Cirebon. Dalam penelitian ini dilakukan pengujian mikrobiologi dan pengumpulan kuesioner dari para pedagang. Pengujian E. coli secara kuantitatif menggunakan metode MPN (Most Probable Number), sedangkan S. aureus menggunakan metode hitungan cawan. Analisa data pengujian secara deskriptif dan hubungan antara karakteristik pedagang terhadap keberadaan E.coli dan S. aureus menggunakan uji Fisher Exact. Dari hasil penelitian yang dilakukan terhadap ikan pindang layang ditemukan 14 sampel ikan pindang yang positif mengandung E. coli. Sementara itu, sebanyak 10 dari 18 sampel ikan pindang positif terdeteksi S. aureus dan menunjukan tingkat cemaran yang berada di bawah batas maksimum yang ditetapkan. Faktor yang mempengaruhi pertumbuhan E. coli pada ikan pindang adalah asal ikan dan lokasi berjualan.
       
      This study aims to determine the amount of E. coli and S. aureus contamination and analyze the relationship between characteristic factors and practices with the presence of E. coli and S. aureus in salted fish (Decapterus sp.) sold at Cirebon City Market. A total of 18 samples were randomly collected from 9 salted fish vendors at Cirebon City Market. In this study, microbiological testing and questionnaire collection were conducted among the vendors. Quantitative testing for E. coli was performed using the MPN (Most Probable Number) method, while S. aureus was tested using the plate count method. Data analysis was conducted descriptively, and the relationship between vendor characteristics and the presence of E. coli and S. aureus was analyzed using the Fisher's Exact Test. From the results of the study on dried fish, 14 samples of dried fish were found to be positive for E. coli. Meanwhile, 10 out of 18 samples of dried fish were positive for S. aureus, showing contamination levels below the maximum limit set. Factors influencing the growth of E. coli in dried fish include the origin of the fish and the selling location.
