      Profil Komponen Aroma Biji Kopi Liberika dari Berbagai Daerah Menggunakan GC-MS

      Abstract
      Aroma khas kopi, yang berasal dari beragam senyawa volatilnya, berfungsi sebagai indikator kualitas yang krusial. Penelitian ini menggunakan GC-MS untuk mengidentifikasi senyawa volatil pada biji kopi Liberika dari Tanjung Jabung, Meranti, dan Kayong Utara, serta menganalisis tingkat kesukaan aroma kopi. Bubuk kopi diekstraksi menggunakan diklorometana dengan standar dekanol, dan dianalisis tingkat kesukaan aroma kopi pada skala 1–9. Kromatogram yang dihasilkan dievaluasi lebih lanjut menggunakan MS-DIAL untuk mengidentifikasi senyawa dengan basis data GCMS DB-Public-KovatsRI-VS3 dan normalisasi terhadap standar dekanol. Analisis komponen utama (PCA) digunakan untuk mengelompokkan sampel berdasarkan daerah asalnya. Penelitian ini mengidentifikasi 44 senyawa volatil, meliputi aldehida, alkohol, alkaloid, asam karboksilat, keton, ester, terpenoid, pirolin, dan fenol. Hasil PCA berhasil mengelompokkan kopi Liberika berdasarkan asal daerahnya. Dari hasil organoleptik, aroma kopi Liberika Tanjung Jabung lebih disukai panelis, sementara kopi Liberika Kayong Utara kurang disukai.
       
      The characteristic scent of coffee, which is derived from a number of volatile chemicals, is an important sign of quality. This study used GC-MS to identify volatile chemicals in Liberica coffee beans taken from Tanjung Jabung, Meranti, and Kayong Utara, as well as to assess aroma preference levels. Dichloromethane was used to extract coffee powder, with decanol serving as an internal standard, and scent preference was evaluated on a scale of 1 to 9. The chromatograms obtained were then analyzed using MS-DIAL to identify chemicals using the GC-MS DB-Public-KovatsRI-VS3 database and normalized to the decanol standard. Principal Component Analysis (PCA) was performed to categorize the samples by geographical origin. A total of 44 volatile chemicals were discovered, including aldehydes, alcohols, alkaloids, carboxylic acids, ketones, esters, terpenoids, pyrazines, and phenol. The PCA successfully discriminated Liberica coffee samples by origin. According to organoleptic examination, panelists favored Liberica coffee from Tanjung Jabung over coffee from Kayong Utara.
