      Pemurnian Minyak Ikan Tuna dan Makerel Hasil Samping Industri Penepungan Ikan

      Abstract
      Minyak ikan tuna dan makerel memiliki potensi yang tinggi sebagai sumber omega-3, tetapi memiliki kualitas yang rendah sehingga diperlukan proses pemurnian. Tujuan penelitian ini adalah menentukan teknik pemurnian minyak ikan tuna dan makerel hasil samping penepungan ikan terbaik untuk meningkatkan kualitas minyak ikan yang diteliti. Proses pemurnian minyak ikan dapat dilakukan menggunakan beberapa metode untuk menurunkan nilai oksidasi. Parameter oksidasi yang dianalisis berupa asam lemak bebas (FFA), bilangan peroksida (PV), bilangan asam (AV), nilai p-Anisidin (p-AnV), dan nilai total oksidasi (Totox). Metode pemurnian yang dilakukan terbagi menjadi dua tahap. Metode pertama dinamai dengan ‘A’ yang menggunakan tahapan degumming, netralisasi, dan bleaching. Minyak ikan yang telah dimurnikan dianalisis parameter oksidasinya. Metode kedua berupa pemurnian dengan menggunakan sentrifugasi menggunakan suhu rendah yang dilabeli dengan ‘A+’. Penurunan nilai oksidasi terjadi setelah dilakukannya tahap pemurnian. Evaluasi metode pemurnian dilakukan dengan melihat penurunan nilai oksidasi pada semua sampel minyak ikan yang diteliti. Hasil analisis data seluruh sampel minyak ikan menunjukan sudah sesuai dengan standar IFOS.
       
      Tuna and mackerel fish oil have high potential as sources of omega-3, but they have low quality, so purification processes are required. The objective of this study was to determine the best purification technique for tuna and mackerel fish oil by-products from fish meal production to improve the quality of the fish oil studied. Fish oil purification processes can be carried out using several methods to reduce oxidation values. The oxidation parameters analyzed include free fatty acids (FFA), peroxide value (PV), acid value (AV), p-Anisidine value (p-AnV), and total oxidation value (Totox). The purification method is divided into two stages. The first method, named ‘A’, involves degumming, neutralization, and bleaching stages. The purified fish oil is then analyzed for its oxidation parameters. The second method involved purification using low-temperature centrifugation, labeled ‘A+’. A decrease in oxidation values occurred after the purification stage. The evaluation of the purification methods was conducted by examining the decrease in oxidation values in all fish oil samples studied. The analysis results of all fish oil samples showed compliance with IFOS standards.
