This issue presents an opportunity for alternative post-harvest processing. The purpose of this research is to analyze consumer attitudes, improve product attributes, and conduct financial and nonfinancial analyses. The methods used in this study include Fishbein analysis, nonfinancial analysis, and financial analysis using profit and loss, R/C ratio, and breakeven point (BEP). The results of the consumer attitude analysis revealed two attributes with the lowest scores, namely product information and packaging, with a consumer attitude score of 140.06. After improving these attributes, the financial analysis showed an increase in the R/C ratio from 1.40 to 1.61, indicating improved business feasibility.
