      Abstract

Shrimp shells contain astaxanthin, a red carotenoid with antioxidant activity up to 500 times greater. This study aimed is to determine the effect of different types of NaDES and ultrasonic-assisted extraction time using NaDES on the characteristics of carotenoid extracts from shrimp shells and their antioxidant activity. This study consists of three stages: preparation of shrimp shells, synthesis of NaDES based on glycerol and urea, and extraction of carotenoids from shrimp shell powder. The experimental design used was a completely randomized factorial design. The type of NaDES, extraction time, and their interaction had a significant effect on the yield, color profile, and antioxidant activity of the shrimp shell carotenoid extract, while moisture content and pH value were not significantly affected by the type of NaDES. The highest antioxidant activity of the crude carotenoid extract (IC50 35 ppm) was obtained from extraction using glycerol-based NaDES with an extraction time of 60 minutes. Overall, extraction using glycerol based NaDES produced better characteristics of shrimp shell carotenoid extract compared to urea-based NaDES.
