      Deteksi Residu Antibiotik pada Daging dan Hati Sapi di Laboratorium Kesmavet DKI Jakarta

      Abstract
      Produksi daging dan hati sapi merupakan sektor yang penting dalam industri peternakan, baik di Indonesia maupun secara global. Peningkatan konsumsi daging sapi di Indonesia yang mencapai 627.952 ton pada tahun 2022, mencerminkan tingginya permintaan terhadap produk ini sebagai sumber protein utama. Seiring dengan meningkatnya permintaan, residu antibiotik yang ditemukan dalam daging sapi berpotensi membahayakan kesehatan manusia. Penelitian ini bertujuan memberikan gambaran yang lebih jelas mengenai permasalahan tersebut dengan melakukan deteksi residu antibiotik (penisilin, tilosin, kanamisin, dan oksitetrasiklin) dalam sampel daging dan hati sapi. Penelitian deskriptif dilakukan dengan menguji 40 sampel daging dan 5 sampel hati sapi. Hasil penelitian menunjukkan bahwa 2 sampel daging sapi terdeteksi mengandung kanamisin dan tilosin, yang berarti sekitar 5% sampel daging sapi mengandung residu antibiotik. Sementara itu, tidak ditemukan residu antibiotik pada sampel hati sapi yang diuji. Temuan ini memberikan gambaran mengenai prevalensi residu antibiotik pada produk daging dan hati sapi yang beredar di pasar
       
      The production of beef and cow liver is a significant component of the livestock industry both in Indonesia and globally. In 2022, beef consumption in Indonesia reached 627,952 tons, reflecting its high demand as a major protein source. However, this rising demand is accompanied by concerns over antibiotic residues in beef, which may pose health risks to consumers. This study aims to investigate the presence of antibiotic residues—specifically penicillin, tylosin, kanamycin, and oxytetracycline—in beef and cow liver samples. A descriptive approach was employed, involving the testing of 40 beef samples and 5 cow liver samples. The results showed that 2 beef samples (5%) contained residues of kanamycin and tylosin, while no antibiotic residues were detected in the liver samples. These findings highlight the prevalence and potential risks of antibiotic residues in beef products available in the market
