Pendugaan Umur Simpan Minuman Ready To Drink Lemon Kolagen Dengan Metode ASLT Arrhenius
Abstract
Minuman ready-to-drink (RTD) lemon kolagen merupakan produk pangan olahan yang sedang dikembangkan dan belum diketahui umur simpannya. Produk pangan olahan yang akan diperdagangkan harus mencantumkan waktu kedaluwarsa sebagaimana diatur dalam Peraturan BPOM Nomor 31 Tahun 2018 tentang Label Pangan Olahan. Waktu kedaluwarsa produk dapat ditentukan setelah mengetahui umur simpannya. Penelitian ini bertujuan menduga umur simpan minuman RTD lemon kolagen menggunakan metode ASLT (accelerated shelf-life testing) dengan model Arrhenius. Minuman RTD lemon kolagen disimpan pada ketiga suhu yang berbeda yaitu 35 °C, 40 °C, dan 45 °C, selanjutnya dianalisis penurunan mutunya setiap seminggu sekali selama lima minggu penyimpanan. Analisis penurunan mutu meliputi parameter mutu objektif berupa total mikrob, nilai pH, dan warna objektif; serta parameter mutu subjektif berupa intensitas atribut sensori terdiri dari flavor lemon, rasa manis, aroma kolagen, dan sensasi astringent. Intensitas flavor lemon ditetapkan sebagai parameter mutu kritis pada minuman RTD lemon kolagen. Umur simpan minuman RTD lemon kolagen adalah 93 hari pada suhu penyimpanan 25 °C. Ready-to-drink (RTD) lemon collagen drink is a processed food product that is currently being developed and its shelf life is unknown. Processed food products that will be traded must include an expired date as regulated in BPOM Regulation Number 31 of 2018 concerning Processed Food Labels. The expired date of the product can be determined after knowing its shelf life. This study aims to estimate the shelf life of RTD lemon collagen drink using ASLT (accelerated shelf-life testing) method with the Arrhenius model. RTD lemon collagen drink were stored at three different temperatures, namely 35 °C, 40 °C, and 45 °C, then analyzed for quality degradation once a week for five weeks of storage. The analysis of quality degradation includes objective quality parameters in the form of total microbes, pH value, and objective color; as well as subjective quality parameters in the form of sensory attribute intensity consisting of lemon flavor, sweet taste, collagen aroma, and astringent sensation. The intensity of lemon flavor is set as a critical quality parameter in RTD lemon collagen drink. The shelf life of RTD lemon collagen drink is 93 days at a storage temperature 25 °C.
