      Abstract
      Keberagaman jenis produk makanan jajanan pedagang kaki lima tidak selalu dipilih dan disukai karena perbedaan persepsi terhadap kondisi higiene dan sanitasi yang dapat mempengaruhi keputusan pembelian. Penelitian yang dilakukan betujuan untuk menganalisis persepsi kondisi higiene sanitasi pedagang kaki lima dan perilaku mahasiswa Sekolah Vokasi IPB terhadap pembelian produknya. Penyebaran kuesioner survei dilakukan kepada mahasiswa aktif Sekolah Vokasi IPB yang pernah membeli dan mengonsumsi produk jajanan kaki lima dengan teknik purposive sampling dan metode penelitian berupa analisis deskriptif. Seluruh responden berjumlah 225 orang yang terbagi menjadi 100 orang responden pria dan 125 orang responden wanita. Persepsi konsumen terhadap kondisi higiene dan sanitasi memiliki kategori yang sangat baik artinya konsumen menunjukkan respon positif terhadap variabel cara pemilihan bahan, penyajian produk dan personal hygiene. Sebagian besar responden memilih membeli produk untuk diri sendiri dengan faktor higiene dan sanitasi sebagai faktor pertama dalam pembelian produk dan dilakukan secara mendadak dengan intensitas pembelian lebih dari 1 kali dalam seminggu
       
      Many variety of food products street vendors are not always chosen and preferred because of differences in perception of hygiene and sanitation conditions that can affect purchasing decisions. The research was conducted to analyze the perception of hygiene and sanitation conditions of street vendors and behavior of IPB Vocational School students towards the purchase those products. The distribution of survey questionnaries was carried out to active IPB Vocational School students who had bought and consumed street food products with purposive sampling techniques and research methods in the form of descriptive analysis. All respondents totaled 225 people which were divided into 100 male respondents and 125 female respondents. Consumer perception of hygiene and sanitation conditions has a very good category, meaning that consumers show a positive response to variables such as how to choose ingredients, product presentation and personal hygiene. Most respondents choose to buy products for themselves with hygiene and sanitation factors as the first factor in purchasing products and are done suddenly with purchase intensity more than 1 time a week.
