      Abstract
      Anak usia sekolah dasar masih dalam tahap pertumbuhan dan perkembangan yang memiliki berbagai kegiatan aktif setiap harinya, sehingga asupan energi dan zat gizinya harus terpenuhi dengan baik. Pemberian makanan selingan dapat membantu memenuhi kebutuhan energi dan zat gizi anak usia sekolah dasar, salah satunya puding tahu buah naga. Puding tahu buah naga adalah makanan selingan bercita rasa manis yang ditambahkan bahan baku tahu dan buah naga untuk meningkatkan nilai gizinya. Penelitian ini bertujuan untuk menganalisis hasil uji hedonik puding tahu buah naga. Penelitian ini menggunakan dua formula dengan perbedaan takaran tahu yang digunakan yakni, 75 gram dan 150 gram. Hasil penelitian menunjukkan bahwa dari segi penampilan formula satu memiliki persentase 89%, rasa 88%, warna 87%, aroma 83% dan tekstur 83%. Formula dua memiliki persentase penampilan 84%, rasa 84%, warna 82%, aroma 78% dan tekstur 88%. Dari data tersebut, dapat disimpulkan bahwa formula satu sebagai formula terpilih dari parameter penampilan, rasa, warna dan aroma sedangkan formula dua unggul pada parameter tekstur.       Elementary school-age children are still in the growth and development stage and have various daily activities, so their energy and nutritional intake must be met properly. Providing snacks can help meet the energy and nutritional needs of elementary school-aged children, one of which is dragon fruit tofu pudding. Dragon fruit tofu pudding is a sweet-tasting snack to which the raw ingredients of tofu and dragon fruit are added to increase its nutritional value. This research aims to analyze the results of the hedonic test of dragon fruit tofu pudding. This research used two formulas with different measurements of tofu, namely, 75 grams and 150 grams. The research results show that in terms of appearance, formula one has a percentage of 89%, taste of 88%, color of 87%, aroma of 83% and texture of 83%. Formula two has an appearance percentage of 84%, taste of 84%, color of 82%, aroma of 78% and texture of 88%. From these data, it can be concluded that formula one is the selected formula for the parameters of appearance, taste, color, and aroma. In contrast, formula two is superior in terms of texture parameters. Keywords: elementary school-age children, dragon fruit, hedonic test, pudding, tofu
