dc.description.abstractUpaya pemenuhan kebutuhan gizi santri di pondok pesantren berkaitan dengan penyelenggaraan makanan yang ada di dalamnya. Penelitian ini bertujuan untuk menganalisis penyelenggaraan makanan, tingkat kecukupan gizi, dan status gizi santri di Pondok Pesantren Pertanian Darul Fallah Bogor. Desain penelitian ini adalah cross sectional. Subjek merupakan santri di Pondok Pesantren Pertanian Darul Fallah sebanyak 71 orang. Sebagian besar subjek memiliki status gizi baik (69,0%). Penyelenggaraan makanan menyediakan tiga kali waktu makan. Tidak terdapat siklus menu pada rentang waktu tertentu. Hasil penelitian menunjukkan bahwa masih terdapat hal yang memerlukan perbaikan di dalam pelaksanaan penyelenggaraan makanan, khususnya terkait fasilitas yang digunakan. Hasil penelitian menunjukkan bahwa, menu yang disediakan mampu memenuhi rata-rata kebutuhan zat gizi santri berupa energi (82,1%), lemak (80,4%), karbohidrat (92,2%), serta zat besi (103,2%), tetapi belum dapat memenuhi kebutuhan harian protein (57,4%) dan vitamin C (40,8%). Sebagian besar subjek mengalami defisit berat pada energi (53,5%), protein (93,0%), dan karbohidrat (77,5%), defisit pada vitamin C (88,7%) dan zat besi (67,6%), serta berlebih pada asupan lemak (50,7%). Hasil uji korelasi menunjukkan bahwa tidak terdapat hubungan yang signifikan antara tingkat kecukupan gizi dan status gizi subjek (p>0,05).id
dc.description.abstractEfforts to meet the nutritional needs of the Islamic boarding school are related to the food service management contained in it. The study aims to analyze food service management, levels of nutritional adequacy, and nutritional status at the Darul Fallah Islamic Boarding School. The design of this study is cross-sectional. The subjects were 71 students at the Darul Fallah Agricultural Islamic Boarding School. Most subjects had good nutritional status (69.0%). Food service is provided three meal time/day. There is no menu cycle at a specific timeframe. The results show that there are still things that need to be improved in the implementation of food service, especially the facilities used. The results showed that the menu provided was able to meet the average nutrient needs of the subjects such as energy (82.1%), fat (80.4%), carbohydrates (92.2%), iron (103.2%), but has not able to meet the daily needs of protein (57.4%) and vitamin C (40.8%). Most of the subjects had severe energy deficits (53.5%), protein (93.0%), carbohydrates (77.5%), vitamin C (88.7%) and iron (67.6%), and excessive fat intake (50.7%). The correlation test results showed that there was no significant relationship between nutritional adequacy level and status of the subjects (p>0.05).id
