dc.description.abstractBuah merupakan salah satu sumber makanan yang kaya akan gizi dan vitamin serta yang sering dikonsumsi oleh kalangan masyarakat Indonesia salah satunya ialah buah pisang. Tujuan penelitian ini adalah mempelajari kriteria dan proses kematangan pascapanen pisang Ambon dari beberapa umur panen dan menentukan saat panen terbaik untuk penanganan pascapanen. Percobaan dilaksanakan di Kebun Percobaan Sukamantri dengan rancangan kelompok lengkap teracak faktor tunggal dengan 5 umur panen pisang. Pengambilan data pengamatan dilaksanakan di Laboratorium Pascapanen, Departemen Agronomi dan Hortikultura, Fakultas Pertanian, Institut Pertanian Bogor. Hasil percobaan menunjukkan pisang Ambon dapat dipanen pada umur panen 90–95 hari setelah antesis (HSA) dengan umur simpan 14–15 hari serta satuan panas mencapai 1265–1330 oC hari. Buah pisang Ambon yang dipanen dengan umur yang tua lebih cepat mencapai kematangan pascapanen dibandingkan buah pisang Ambon yang dipanen dengan umur yang lebih muda. Faktor umur panen tidak mempengaruhi secara signifikan sifat-sifat fisik dan kimia buah pada tingkat kematangan pascapanen yang sama.id
dc.description.abstractFruit is one of the rich sources of nutrition and vitamins and is commonly consumed by the Indonesian population, one of which is the banana. The aim of this research is to study the criteria and post-harvest ripening process of Ambon bananas at different harvesting ages and determine the best harvesting time for post-harvest handling. The experiment was conducted at the Sukamantri Experimental Garden using a completely randomized design with a single-factor treatment, which involved 5 different harvesting ages of bananas. Data collection and observations were carried out at the Post-Harvest Laboratory, Department of Agronomy and Horticulture, Faculty of Agriculture, Bogor Agricultural University. The results of the experiment indicate that Ambon bananas can be harvested at the harvest age of 90–95 days after anthesis (DAA), with a storage age of 14–15 days, and they require a cumulative heat unit of 1265–1330 oC day. Ripe Ambon bananas harvested at an older age reach post-harvest ripeness faster compared to Ambon bananas harvested at a younger age. The harvesting age factor does not significantly affect the physical and chemical characteristics of the fruit at the same level of post-harvest ripeness.id
