      Abstract
      Penelitian ini bertujuan untuk mempelajari pengaruh penggunaan ragi tempe dalam bentuk biakan murni dan laru serta waktu fermentasi terhadap perubahan kadar purin dalam kedelai (Glycine max). Penelitian ini dilakukan di laboratorium Mikrobiologi Pusat Penelitian dan Pengembangan Gizi Bogor, terhitung, sejak bulan April sampai dengan bulan Juli 1996.
