      Abstract
      Dekstrin merupakan salah satu produk hidrolisis pati berbentuk serbuk amorf yang mudah larut dalam air dingin. Tingkat dekstrinasi (hidrolisis) dapat berpengaruh terhadap sifat fisikokimia dekstrin yang mengakibatkan perbedaan penggunaannya dalam industri pangan.
